It seems everyone is looking for ways to keep things simple in the kitchen leading up to the holidays. That doesn’t mean that you have to give up good choices for nutritionally deplete convenience foods! “And arrival of the “silly season” doesn’t mean you have to let your nutrition slip either. Sometimes short and sweet is the way to go–as this post will be! This quick dinner combines great sources of protein, carbs, vitamins and minerals without skimping on flavour. It also takes into account the belt tightening we’re all trying to achieve for the holidays (one backstrap easily feeds two adults): Pan-seared spicy lamb backstrap on a bed of roasted heirloom carrots, coriander (cilantro for those stateside) and hazelnuts, finished with a drizzle of natural yoghurt (the Paleo folks can omit this or substitute with coconut yoghurt or cashew cream). Clean, simple, good eatin’!
