There is no better way to start the work week than with a scrumptious, nutritious, satisfying breakfast. With a full day of consults ahead of me, I needed nourishment that would see me through until lunchtime, since I had little time to graze between meals. Using a five-grain oat mix gives a great variety of texture and a more earthy flavour than just traditional oats and they hold their shape really well. I often have clients say they are starving an hour after eating porridge for breakie…the key is adding protein, healthy fats and other low GI carbs for a more sustained energy release. Here I’ve added chia seeds (rich in Omega 3s), fresh blueberries and dried goji berries (both little antioxidant powerhouses), cinnamon (good for blood sugar control), raw pumpkin seeds (high in zinc), Loving Earth Carmelised Activated Buckinis (fancy buckwheat and great crunch) and a dollop of coconut yoghurt.
