Microgreens are more than a pretty little garnish (although they’re that too). We’ve seen them “crop up” all over our plates at fancy restaurants and while they are bright in colour, intense in flavour and crisp in texture do they actually offer any benefits above a pretty plate? Well, it turns out they do. A study published in 2012 found that several varieties assayed actually had high concentrations of ascorbic acids, carotenoids and tocopherols, some even higher than the mature leaves of their grownup relative! Now it’s true that these little gems aren’t going to provide a healthy diet by themselves, but what better reason than added nutrition and total cuteness to add them to your home-cooked meals?
